Thought I'd chime in that tempeh is a mixed protein, so it has about the same amount of protein as it has carbs. Just something to keep in mind if you use that as a protein source..

Ok, when I get stressed, I have a high need for details, and when I gear up for competition or decide to drastically change my life, I stress, so:

What about the denser squashes like butternut/acorn?And, my favorite potato substitute the jicama?

With pre-made sausage, there is usually added sugar/maple syrup added for taste. (I am assuming the ones with cheese are out). Is there a carb level I should look for on the packaging or just avoid?

Same question for sauces?

Finally, coconut milk?

Here a tip for shelling eggs. I've tried it more than a few times and it does save some time in the am. Be sure to cook the eggs in a lower heat though, I've cooked them too high before and have a mess on my hands when I try this technique.

If you just empty the water out of the pan, put the lid back on, then swirl & shake the hell out of the pan -- when you take the lid off, all the eggs will be peeled. No lie.

I see bacon fat under fat -- but is BACON a protein??

the soy is un-paleo, you are correct, but i think those items were listed for a few vegetarians in the crowd that wanted to participate in the lockdown.

the short answer on green beans and peas is that -yes, they're legumes, which generally isn't paleo. BUT, green beans are okay because you're mostly eating the husk and the pod inside isn't mature. peas, on the other hand, are sub-optimal. for the full discussion on this (cause i had asked the same thing about the peas and green beans before), check out the comments section for the "You Are Beautiful" post a while back.
