Amazing Results

I have tested over 10,000 people... the results from this [one month] challenge held at Crossfit North Atlanta were amazing. The participants not onlylost body fat (up to 12 pounds) but also gained muscle (lean) mass (up to 2-3 pounds)

Ann-imal attempts baking Part 2: Paleo Banana Walnut Muffins

Annimal strikes again, but this time with muffins.  Who doesn't like muffins?  EXACTLY, and this Paleo recipe brought to us from Feasting on Fitness is incredible! 

Dry Ingredients:
2 C almond flour/meal (Trader Joe's Almond Meal is the cheapest)
1/3 C coconut flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg (grated fresh)
1 C baking walnuts

Wet Ingredients:
2 bananas, the riper the better
1 T vanilla
3 eggs at room temperature
1/3 C honey
3 T oil (olive oil is fine, coconut oil when liquid is excellent, and hazelnut oil hits it out of the park!)
2 T almond butter (unsalted, but if salted, just add 3/4 tsp salt instead of 1 tsp)

Preheat oven to 350 degrees and place walnuts in to roast.  Keep an eye on the walnuts, they burn easily!  Mash bananas into a liquid.  Mix in the honey and almond butter.  Scramble eggs and add in with oil and vanilla.  In a separate bowl mix all the dry ingredients including walnuts.  Mix wet and dry ingredients.  Place in muffin cups.  Depending on if you are making small or large muffins, cooking time will vary.  It can take anywhere from 10-20min.  My batch made 12 muffins and took 15 minutes.  The smaller the muffins you are making, the less cook time and vice versa.  Enjoy!

Wow...look at you. Chef Annimal. Ok, where do I get coconut flour and hazelnut oil (whole foods?) And did you say SCRAMBLE the eggs? How very odd.

I eliminated the coconut ingredients from my batch and used olive oil instead of hazelnut oil. I'm guessing they'd be available at Whole Foods or Trader Joes. And when it says "scramble" I just mixed them in a separate bowl...no cooking of the eggs involved.

That clears that up...I was really thrown off by the scrambled eggs in the muffins...glad I didn't try to maker them for the kids before the clarification...might have been the end of anything paleo for them:)

I just made these and they are yummy! My first Paleo baked good, I didn't think it was possible....added a handful of chocolate chips(cheating) I would love them either way!

Glad everyone is enjoying these too! I have brought them to my CrossFit gym and people can't believe they don't include wheat flour. They are BETTER than wheat flour muffins. Seriously.
